Vegan Coco Yoghurt bowl

A simple vegan bowl to start your day with or to have at anytime time of the day. Couple days ago I had it after lunch for desert. I am not vegan but I like to have vegan options in my diet to change for times to times.  I have a hard time  with lactose so most of my dairy are plant based, plus trust me, you will not taste the difference . The only item that may give you a difficult time to find is the yoghurt. Other than that all other ingredients are vegan and easy to find.

Not vegan or cannot find a plant based yoghurt? no worries, your regular yoghurt will do fine but it will not be a vegan bowl then.

For the recipe I decided to go with a plain dairy free coconut yogurt. Other dairy free yoghurts alternatives are almondmilk yoghurt, cashewmilk yoghurt, or combination of cashew and coconut milk. Those are what I know and if you know other plant based alternatives, please let us know in the comment section. I chose my yoghurt plain, because I want to be in control of the sugar level in it and all the flavors I want: More fun that way.

For the sugar, I used coconut sugar but regular sugar will be fine also. I also used coconut flakes and coconut milk. At that point, the name of my dish should have been coconut fruit bowl. The only coconut variation missing is the coconut water. Well let’s get cooking.

Ingredients

  • 1 cup plain coconut Yoghurt or plant based yoghurt
  • 1/3 cup coconut milk
  • 1/4 shredded unsweetened coconut flakes
  • 1 tbsp chia seeds
  • 1 tsp coconut sugar (or more if you like)
  • 3 dates
  • 3 strawberries
  • 1/4 cup of blueberries
  • 1/2 mango

Direction

In a bowl mix yoghurt with coconut milk.

Add the coconut sugar and blend well.

Cut the mango, strawberries and dates. Not need to cut the blueberries.

Top the yoghurt mixture with all the fruits.

Add the chia seeds and top everything with the coconut flakes.
