Plantain cake

Do you want to surprise your guests with an innovative appetizer? Well I got the perfect one for you. One simply made with plantain and eggs. Plantain for appetizer? Yes, why not! It is time to change things up a little. For my official blog launching, I made a plantain cake for my guests. The result was amazing, and they loved it. At first, I wanted to put some vegetables inside but since my sisters Liline and Ange do not really like vegetables, I had to abandon the project. Usually vegetables will add a strong and delicious flavor to this cake, but when having guests, you have to find the perfect middle to please everybody.

Ingredients

  • 6 eggs
  • 1 small bunch of cilantro
  • 1 small bunch of parsley
  • 2 pinches salt
  • 2 pinches black pepper
  • 2 pinches garlic powder or grated garlic
  • oil
  • butter
  • Baking dish

Instructions

  • Preheat the oven at 350 Fahrenheit
  • Cut the plantain into round slices
  • Fry them into oil and drain to remove excess oil
  • Put butter into the baking dish
  • Place the plantain slices into it and make layers
  • Beat the eggs and add salt, pepper, and garlic
  • Chop the cilantro, the parsley and add it to the eggs
  • Pour the mixture over the plantain
  • Bake it in the oven for 15 minutes, until the center is firm

 

Suggestion:

Can be served with fresh or sautéed vegetables
