Parsley-butter Mushrooms

This recipe is a 100% vegan and it will please not only my followers that have a special diet, but everybody. I have a friend who recently switched her diet and is having a little trouble to adapt to her new lifestyle. When I found out this recipe of fresh buttons mushrooms, I decided to adapt it my way because there was too many ingredients and I love to make things simple. The result was great, and they had a success at home. I easily ate 17.5 ounces alone with some fish.

Parsley-Butter mushrooms

A savory side dish of mushrooms glazed with butter, garlic and parsley!

  • 4.5 lbs mushrooms
  • 8 garlic cloves
  • 12 parsley sprigs
  • 3 tbsp butter
  • Salt
  • Black pepper
  • 2 tbsp water or wine


  • Chop parsley and garlic
  • Rinse mushrooms with cold water and pat dry
  • Melt butter in pan
  • Caramelize mushrooms in butter for 3 minutes
  • Add garlic and parsley, and cook for 2 minutes
  • Add salt and pepper
  • Add water (or wine) and let it simmer for 2 minutes
