This is my go to meal that I like to make with left overs. For the meat it can be anything but the day I decided to record the recipe, I had on hand shrimp and beef stew. It i easy simple and a good way to eat your vegetables. Do not worry if you do not have any left over meat, you can use any other cook meat or even canned meat.
Ingredients for 1
1 plantain cut in round pieces and fried
2 eggs
2 tbsp milk
1 garlic clove
1 bunch of spinach
1/2 tomato
1/4 onion
About 3 oz of meat (any kind it can also be fish like canned tuna)
Steps for this delicacy
Cut the plantain into round pieces and deep fry them into hot oil. You can cut the plantain into another shape but keep in mind that the final result will not be as pretty and not flat at all.
Wash your spinach and tomato.
Chop the tomato, onion, garlic and half of spinach into small pieces.
Into non stick a pan, put 2 tsbp of oil and when it is hot add the garlic, onion and spinach.
You can add all the spinach at this time if you want it to be all well cooked.
Cook for 2 minutes at medium heat.
Then add your meat (for me it was left over shrimp and beef stew).
Add the tomato.
Into a bowl whisk your eggs with the milk, 1 pinch of salt and 1 pinch of black pepper.
Lower the heat and add the eggs to the pan.
Then add the fried plantain into a circular motion.
Still at low heat, cover the pan and let it cook 3 minutes.
Slide the meal into a plate and enjoy!
