Cucumber Sushi Roll

Ingredients for 2

-1 cucumber

-4 oz cream cheese

-1 bell pepper

-1 carrot

-1 avocado

-1 tsp of grounded hot pepper

-1 lime

-1 ginger root

-Cooked Shrimp, Crayfish or Smoked Salmon

-Olive oil (optional)


  1. Into a bowl, mix the cream cheese with the pepper, and lime juice.
  2. If you cannot tolerate hot pepper, simply replace it with paprika. This will add flavor to your mixture too.
  3. Use a vegetable peeler and slice the cucumber into flat strips. Discard the first skin peel. Continue to do so until you reach the middle part with the seeds. Then turn it around and do the same on the other side.
  4. Cut the avocado into small thin pieces along with the bell pepper.
  5. Use the vegetable peeler to cut the carrot into little strips.
  6. Grate the ginger.
  7. For the assembly, lay 2 cucumber slices and spread the cheese mixture on top. Add your toppings however you like and roll them up.
  8. Then place them upright on a plate.
  9. A tip from one of my good friend “You can add some olive oil or lime juice on top for extra kick.”
