Baked Tilapia

My favorite version of the tilapia. I love to do it on the weekends Ivorian style. The fish will be so juicy, moist and flavorful. Do it to impress family and friends.

  • 2 lbs tilapia
  • 2 tbps  grated ginger
  • 2 tbsp grated garlic
  • 1 small bunch of parsley
  • 1 lime juice (or lemon)
  • 2 tsp black pepper
  • 1 tsp salt ( less or more according to your taste)
  • Optional: 1 seasoning cube flavor
  • 1 tomato
  • 1/2 purple onion
  • 1/4 cucumber
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 tbsp oil
  • 4 plantains

Preheat the oven at 380 F.

Make sure the fish is clean and fresh.

Using a sharp knife, make 2 deep cuts on each side of the fish.

Grate ginger, garlic and put then inside the fish, on the exterior and put most on the cuts.

Add half of the lime juice, 1 tsp salt and 2 tsp pepper.

Chop the parsley and put it on the inside and outside also.

Add 1 tablespoon of oil to avoid your fish to stick on your dish.

I you prefer, you can blend all ingredients together and marinate your fish.

Bake in the oven for 30 minutes.

In the meantime, diced the tomato, the cucumber and cut the onion.

Add the remaining half of the lime juice,  1 tbsp oil, 1/4 tsp black pepper and 1/4 tsp of salt.

This will make the moyo sauce.

Cut the plantains and deep fry them.

Bon appétit!
